- 4 egg yolks
- 100g caster sugar
- 250ml double cream
- 2 teaspoons vanilla sugar

- Clean and hull strawberries. Puree till smooth and refrigerate.
- In a hot waterbath or a double boiler, beat egg yolks with sugar till thick and foamy. Remove from the heat and let cool.
Beat double cream with vanilla sugar till stiff. Fold in egg yolk mixture and yoghurt. Tip in a freezing container and level the top with a spatula.
- Freeze for a day or overnight. Remove from the freezer a few minutes before serving.

Strawberry Parfait
Strawberries, cream, and summer: these three belong together. It's so easy to put strawberries into a bowl and simply pour over a little cream for a quick summertime treat. But by spending a few quick minutes whipping the cream with vanilla and layering the fruit with amaretto-soaked amaretti biscuits, you have an elegant strawberry parfait.
Strawberries play the starring role in this recipe, so make sure the ones you get are large, juicy, and sweet. For the whipped cream, always use real vanilla bean extract, never essence.
Amaretti biscuits are a classic Italian treat. Chewy and flavored with almonds, these cookies make a lovely base for desserts like this. Here they are gently soaked in sweet amaretto liqueur for extra sweet almond flavor.
- 4 cups sliced strawberries, divided
- ¼ cup granulated sugar
- 1 cup fat-free ricotta cheese
- ½ cup (4 ounces) 1/3-less-fat cream cheese, softened
- ¼ cup powdered sugar
- 1 tablespoon water
- 1 teaspoon vanilla extract
- 1 cup amaretti cookie crumbs (about 8 cookies)
- ½ cup frozen reduced-calorie whipped topping, thawed
- 2 tablespoons slivered almonds, toasted
Place 2 cups of strawberry slices and granulated sugar in a blender or food processor, and process until smooth. Set strawberry puree aside.
Combine ricotta and next 4 ingredients (ricotta through vanilla) in a medium bowl stir well with a whisk. Spoon 2 tablespoons cookie crumbs into each of 4 parfait glasses. Top each portion with 2 tablespoons strawberry puree, 1/4 cup strawberry slices, and 3 tablespoons ricotta mixture repeat the layers. Drizzle the remaining strawberry puree over each serving. Chill for 2 hours. Top each parfait with 2 tablespoons whipped topping and 1 1/2 teaspoons almonds.
To begin making the Strawberry And Yogurt Breakfast Parfait Recipe, first remove the stem from the strawberries and quarter them into even size pieces.
Do make sure you have some granola ready. If you don't have granola made at home, then you can use a ready made muesli as well to make the parfait. The granola or the muesli adds crunch to the parfait.
Add the cut strawberries into a large mixing bowl. Add the honey and toss to combine well. Cover the bowl and allow it to rest in the honey until you notice that the strawberry begins to release the juices. This would take about 10 minutes.
The next step is to assemble the parfait.
To begin, have a set of 4 small serving bowls or glasses ready. Layer the parfait alternatively with the hung curd and the honeyed strawberries and finally top it with granola.

Recipe tips:
- Parfait can be made of yogurt or sour cream. I like the fat consistency of sour cream, but I have made parfait of plain yogurt as well.
- Additionally, you can add some drops of liquor.
- The classic recipe requires egg yolks, however, I have never used it when mixing the cream.
- I usually use icing sugar, but you can easily add confectioners’ sugar. Both versions are okay.
- Fruits: here you can add the seasonal ones, the ones you like despite what time of year it is, or frozen.
- If you store it before serving do not top the whipped cream. Garnish it at the time you are serving it.
- Granola here is also optional. You can add chopped Graham’s cookies that will suit perfectly a great-tasting parfait.

Florida Strawberry Parfait
In a medium-sized mixing bowl combine whipped cream cheese, sugar, and lemon juice. Fold the yogurt into the cream cheese mixture. In four wide-mouth glasses evenly layer cream cheese mixture, strawberries, and crushed graham crackers. Garnish with sprigs of fresh mint, serve chilled.
