This year I have the honor to be part of the Hochland Sandvis Fest of 2017, the festival of the most ingenious and delicious sandwiches! What happened on this delicious journey into the world of sandwiches? With you I discovered new recipes and once again I came to the conclusion that a sandwich means much more than two slices of bread "with something in between".

Avocado peel, remove the seeds, cut into cubes and together with bell pepper, cleaned of seeds and cut into small cubes, we will put them in a bowl, to be used later.

Now is the time to taste the cocoa pudding with avocado and adjust it to taste and texture according to your preference. You can add a sweetener or, if it doesn't seem creamy enough, you can add 1-2 teaspoons of coconut vegetable cream or half a banana. If, on the other hand, it seems too thick, you can thin it with a little vegetable milk.

Transfer the pudding to ramekin dishes, cover the edge of the dishes with plastic wrap and let cool for at least 30-60 minutes before serving. It can be served as such or garnished with whipped cream, chocolate syrup and almond flakes.

The pudding can be kept cold, covered, until the next day.
