Dough:

Put the flour in a bowl. Rub the yeast with the sugar and milk. Then place it over the flour, where the sugar, oil and vanilla sugar are added. Knead until it becomes an elastic crust. Leave to rise for 30 minutes.

Filling:

Grate the cheese (you can also use the kneaded cheese), add eggs, vanilla sugar, lemon peel, baking powder, sugar and raisins. Mix until smooth.

After the dough has risen, divide it into 3 equal parts. Spread a sheet, put a quarter of the filling and place it in a pan greased with oil. The same is done with the other two.

Put in the oven for 35-40 minutes on low heat. When removed from the oven, powder with powdered sugar.

Ingredients peasant cheese pie

  • 400 grams of telemea
  • 250 ml. of milk
  • 75 gr. wheat semolina
  • 2 eggs
  • 1 dill bunch
  • 1 egg on top

Preparation of peasant cheese pie

Bring the milk to a boil. When it boils, add the semolina in the rain, stirring constantly, until it has the consistency of a polenta. Set aside and allow to cool.

In a bowl, mix the semolina homogeneously with freshly heated milk, cheese, eggs and chopped dill.

Spread the dough sheet exactly like a cabbage pie, cut the edges with a sharp knife and place the filling in the middle, shaping it into a circle with a radius of about 25-30 cm.

Cover the filling, pulling the edges of the dough towards the center:

Grease the surface of the pie with beaten egg. After I greased the pie, I modeled some more seasonal decorations from the cut edges, beef leaves and a grape, which I placed on top and brushed with egg:

I baked the pie in the preheated oven at 190 degrees Celsius, until it browned nicely (about 25-30 minutes):

250 gr fresh cow's cheese
250 gr telemea (or feta)
3 eggs
1 cup milk (250 ml)
1 pack of pie sheets
a few tablespoons of oil
4-5 tablespoons yogurt (or sana, whipped milk or sour cream with a little milk to have the consistency of yogurt)

Method of preparation

Beat the eggs well, add the milk and beat until smooth, then add the cottage cheese and the crushed telemea. Season with 1-2 pinches of pepper. Mix, obtaining a composition that has the consistency of a cream.

Grease a 20x30 cm tray with oil. The tray is half the size of a pie sheet. The easiest way is to make the layers using sheets folded in half in width, they fit snugly, they don't have to be cut.

We start building the pie: a sheet of pie folded in half, sprinkle with oil (including between the two rows), then another sheet folded in half and sprinkle with oil again (when I say sprinkle it means inserting a fork in oil and dripping on the sheet) . Now we have 4 layers of sheets in the tray. Next the filling: put 2 polishes on the sheets and level with the back of a spoon. Repeat the layers until you finish the filling, finishing with a layer of pie sheets. Place the last sheets slightly off-center, and push the edges down with the tail of a fork to seal the filling inside.


* keep the pie sheets, which you did not work with, covered with a damp towel because they dry quickly

The last layer of pie sheets is pricked with a fork on the whole surface, sprinkled with oil, then greased with plenty of yogurt.

Bake in the preheated oven at 200C for about 50 minutes, until golden brown on top. During baking, the pie swells quite a bit, but is left when you take it out.

Remove the pie from the oven, cover with aluminum foil and leave to cool. Serve warm or cold with a glass of yogurt.


Ingredients Burek salted cheese & # 8211 cheese pie

  • a packet of pie sheets (Serbs were mine, but also the Romanian ones from the trade give very good results)
  • oil for greasing
  • 1 kilogram of lightly salted cheese & # 8211 means a mixture of fresh cow's cheese with salted telemea, or just cottage cheese that you salt as much as you like the filling should be pleasantly salty, not with exaggeration
  • 5 medium or 4 larger eggs
  • 200 grams of sour cream

Method of preparation

1. Grate or grind the cheese finely and mix all the ingredients for the cheese burger filling. The composition must be quite fluid, if it is too sticky add more cream or an egg.

2. Turn on the oven and heat to 190 ° C.

3. Place 2-3 sheets in a well-oiled pan. The tray I use is 40 x 28 cm. Grease the top sheet lightly with oil.

4. Place a layer of filling on top of the pie sheets.

5. Continue in the same way, alternating 2-3 sheets with the cheese composition, until 5 layers of sheets and 4 of filling are obtained (depending on the size of the tray). The last layer must be sheets. With a special pastry brush, lightly grease the cheese with oil on the surface.

6. With a sharp knife, cut the burek with cheese, now, as raw, in portions sized according to the taste of the tasters.

7. Beat the egg well with mineral water and sour cream. Float the cheese spoon over the entire surface with this fluid composition. This fluid composition is allowed to pull the sheets a little.

8. Burek tray with salted cheese and bake in the preheated oven at 190 degrees and bake for 45-50 minutes. You can see the ready burek in the image below.

9. Allow to cool slightly in the pan. Cut the burek with cheese, following the cuts made previously.

Filling preparation:

Let the goji berries hydrate in water at room temperature and the rum essence for at least 10 minutes, and then drain them.

In a separate bowl, mix the cheese with the goji, sweetener and vanilla essence. Beat the two eggs separately. Pour most of the eggs over the cheese, but keep a little for the dough to grease.

You can increase the amount of filling ingredients depending on the height of the tray (exp. Another 250 g cheese, 1 egg and 1-2 lg sweetener).

Assembly:

Take the dough out of the fridge and set aside about ¼ of it for decoration. The large piece of dough is spread on a plate sprinkled with gluten or starch. Lay in a thin sheet the size of the tray you are using (preferably silicone). Place the sheet in the tray, raising the edges, and then pour the cheese inside.

From the remaining dough, spread a sheet from which you cut the strips (you can also make the decoration, braided type) and place them over the cheese in the tray. Grease the pieces of dough with egg.

Place the tray in the preheated oven at 180 degrees and leave for about 45-50 minutes.

Allow to cool slightly and you can consume it either hot or cold (keep in the fridge).
