The sausage balls they are definitely not a light dish but certainly very good! If I have to be honest I had never made meatballs using sausage meat (except to make Scotch eggs, which are a different thing), but I must say it is worth it. They are obviously very easy to do and also quite quick, so I would say that if you are not on a strict diet I recommend that you do them ... and even in that case, a nice sgarro on Sunday for lunch can fit, right?
These meatballs are the work of Daniela: every now and then she leaves SMM's clothes and gives me a hand in the kitchen and these came directly from her hands, very good!
How to make sausage balls
First of all coarsely chop the onion and brown it with a little oil in a non-stick pan together with the finely chopped rosemary, then drain the oil and let it cool.
Remove the sausage from the casing and put it in a bowl with the bread sponged in milk and squeezed, the cheese, the paprika and the onion.
With wet hands, shape the meatballs, not too big so that they don't take too long to cook.
Take the onion pan back and use it to cook the meatballs.
Brown over high heat, then close with a lid and continue cooking over medium-low heat.
Your sausage balls are ready, serve them immediately and enjoy your meal!
